WASHINGTON, N.C. (WNCT) – If you have a house-full this Thanksgiving, your dinner plans are probably already in the works. If you’re planning to cook all day, breakfast may be the farthest thing from your mind.
That’s where Chef Christian Brown comes in. He’s a well-known chef who’s worked in some of the best kitchens in the nation, even appearing on Food Network. Now, he’s back in the East as a co-owner of Green, Lean and Clean meal prep service.
He’s showing us how to make Bananas Foster French Toast, in less than 10 minutes, which is perfect for your friends and family Thanksgiving morning.
Here’s what you’ll need:
– Two bananas, peeled and cut
– ¼ cup brown sugar
– 2 tablespoons butter or bacon fat/butter mixture
– 1 oz. vanilla extract with 1oz. water
– Chinese Five Spice
– Banana nut muffins (store bought)
– Candied nuts
– Whipped Cream
French Toast Batter:
– Two eggs
– 1 pint of whipping cream
– 1/2 cup brown sugar
– Cinnamon to taste
First, get your pans ready. Melt a good bit of the bacon fat and butter mixture in two separate pans. While that’s going, prepare your ingredients.
Add some of the Chinese Five Spice to the whipped cream and set aside.
Then, slice your bananas and halve each muffin.
“I cut the muffins in half because the outside is baked and it won’t absorb the French Toast batter,” said Chef Brown.
Then, take your muffins and coat them in the French Toast batter and add them to one of the pans. Next, add your sliced bananas to the other pan…
“Be careful when you do this,” said Chef Brown. “The reason I mix my bacon with my butter is not only for great flavor but because it gives it a higher smoke point and it will put some caramelization on the outside of the banana.”
Once in the pan, top with dark brown sugar.
“I like dark brown sugar because it has more molasses in it. You can use light brown if you want, white sugar if you want. I just like the dark brown because it has nice flavor,” said Chef Brown.
Once the brown sugar starts to melt, add the vanilla extract mix and let it cook down.
Take the muffins off the heat once toasted on each side. When the bananas are ready, it’s time to plate.
Place the muffins in a bowl, top with the bananas. Add the whipped cream mixture and finish it off with the candied nuts and syrup.
